The man behind the blade
Meet Lee. Your butcher, your neighbour.
A proud Sandbachian, a lifelong love of good food, and a craft built over more than 25 years.

It started with a Saturday job.
At 14, Lee started as a Saturday lad in a local butcher’s shop. What began as a weekend job grew into a career: learning the trade, mastering the cuts, and working his way up to managing butcher shops.
Tradition, with a fresh perspective.
His degree in Food Science and Innovation brings another dimension to the counter. Traditional butchery meets a deeper understanding of food production, quality and sustainability.
His own counter. His own hometown.
Opening a butcher’s shop in Sandbach was a long-held ambition. The Butchers Blade is that ambition made real.

From Saturday lad to master butcher.

A Saturday lad at 14
Lee’s first job was sweeping floors and watching the butchers at work in a local shop. Every Saturday he learned a little more — how to hold a knife, how to read a carcass, how to talk to customers.
- 02
Learning the whole trade
Over more than 25 years he worked through every part of the counter: boning, seam butchery, sausage making and dressing poultry — eventually managing butcher shops of his own.

Food Science and Innovation
Alongside the craft, Lee earned a degree in Food Science and Innovation, giving him a deeper understanding of food production, quality and sustainability.

The Butchers Blade, Sandbach
In his hometown’s Market Hall, Lee opened his own independent counter — a place to talk through a cut and get to know the person preparing your food.
