Boxing Day leftover turkey ideas

Four easy ways to use up cooked turkey safely — from a creamy pie to a Boxing Day sandwich.

Store it properly first

Cool leftovers and refrigerate within 1–2 hours of cooking. Eat within 48 hours, or freeze, and reheat only once until steaming hot throughout.

Turkey and ham pie

Soften leeks in butter, stir in a little flour, then stock and cream to make a sauce. Fold through turkey and ham, top with pastry and bake until golden and piping hot.

Turkey curry

Fry onion, garlic and ginger with your favourite curry paste, add tomatoes or coconut milk and simmer. Add the cooked turkey at the end and heat until steaming hot.

The Boxing Day sandwich

Thick-sliced bread, cold turkey, a slice of stuffing, cranberry sauce and a handful of leaves. Add a gluten-free sausage from the counter, cooked and cooled, for a proper finish.

Turkey broth

Simmer the carcass with onion, carrot, celery and bay for a few hours, strain and use for soups and risotto. Cool quickly and refrigerate or freeze.
