How to cook Christmas turkey safely
Plan fridge space, defrosting, cooking and leftovers before the big day.
From preparation to plate
- Check the bird’s weight and its instructions. Make space on the bottom shelf of the fridge, in a container that catches raw juices.
- If frozen, defrost fully in the fridge following the label, allowing enough time for the size of bird. Never wash raw turkey.
- Preheat the oven and follow the turkey’s cooking instructions. Cook stuffing separately to make thorough cooking easier.
- Check the thickest parts of the breast and thigh with a clean thermometer, avoiding bone. Ensure the bird is thoroughly cooked before resting and carving.
- Cool leftovers and refrigerate within 1–2 hours. Use refrigerated leftovers within 48 hours or freeze; reheat only once until steaming hot throughout.

Serving and pairing ideas
Roast potatoes, greens and cranberry sauce work well. Try Chardonnay or a light Pinot Noir; sparkling apple with rosemary is an alcohol-free alternative.
Check before you serve
No single minutes-per-kilogram rule fits every turkey or oven. Product instructions and thorough temperature checks take priority.
For poultry, pork, minced meat, sausages, rolled joints and mechanically tenderised meat, cook thoroughly: the centre should reach 70°C for 2 minutes, or 75°C for 30 seconds. Clean the thermometer before and after checking.
